The Hyatt Canberra, a Park Hyatt hotel, always know how to dazzle their guests and to live up to their mantra that Luxury is Personal. On Wednesday evening last week I was fortunate enough to join a full house of Canberra’s Latin American community in celebrating the launch of the Latin American Flavours Festival in the Federation Ballroom.
Now in its third year, the festival sees thirteen of Canberra’s Latin American embassies joining forces with the amazing chefs at Hyatt Canberra to provide Canberran and inter-state diners with a taste of their culinary treasures this June. For the next three weeks Hyatt is hosting a series of buffet dinners featuring six to eight dishes chosen by each embassy to showcase their country, prepared by executive chef Nitin Kumar and his team in the hotel kitchens.
It was a delightful evening of delicious food and colourful performance. The festival was officially opened by Hon. Julie Bishop MP, Minister for Foreign Affairs, who spoke about Australia’s proud multicultural heritage and close ties with the countries of Latin America. Following on from the opening of the Gala, thirteen countries were represented on our plates and in our hearts, with delicious buffets and desserts, and phenomenal presentations of classical and contemporary dance and song. The humblest ingredients were transformed into delicacies by the talented Hyatt Canberra chefs with instruction from embassy chefs, and the result was a tour de force of Latin America, the continent of flavours.
Personal favourites of mine were the cooked-to-perfection steak assado, served with fresh chimichurri, and for dessert it would have to be the melt-in-your-moth banana rum tart that packed quite a wallop.
If you have travelled through Latin America or if you have always dreamed of doing so, this is the at-home taste of what you have been dreaming about. Celebrate everything Latin American cuisine has to offer right on your own doorstep sounds like a fantastic way to beat the onset of the Canberra winter. For the third consecutive year Hyatt Hotel Canberra present this sought after culinary festival, and invite you to enjoy authentic recipes, international guest chefs and live entertainment.

I was delighted to attend the Gala opening, and have to extend my thanks to Fredrick Arul, general manager of the Hyatt Canberra, and Avon Dissanayake, marketing and communications manager, who were my hosts for the evening; and of course the amazing Hyatt Canberra team for making it a truly remarkably and luxurious evening.
